1.65.1 endgame plan

This issue collects release blockers and fixes to be backported for the 1.65.1 patch release.
Check off an item once the fix has been ported to the release/1.65.x branch.

• Settings - Can't reset String settings + other issues in display #16339
• Error in the chat after adding / using Sonnet 4.5 #16355
• Fix commonly used settings section missing #16342
• Settings - MCP's new settings are not categorized and displayed under a wrong category instead of the MCP section #16338
• fix: avoid trying to use watchman for file system watcher #16335

Important Follow-Ups (previously blockers)

• Disabled built-in extensions are re-enabled after update theia-ide#579
• TheiaIDE Update not working. Have to uninstall old before installing new version theia-ide#573
