Traefik v2.0 not compatible with latest docker

Traefik v2.0 throws an error on the latest docker versions:

```
Error response from daemon: client version 1.24 is too old. Minimum supported API version is 1.44, please upgrade your client to a newer version
```

This issue is solved in version v2.11, 
Security support for Traefik v2 ends Feb 01 2026, so recommend changing the default to v3.6 (or v3 to always use the latest v3.x)
