Improve documentation for oRPC/otel #918

Describe the change
The documentation mentions that it's most of the time enough to instrument the server and not the client, but without explaining why / what it changes?
It would be quite useful for people instrumenting their code to know what they gain if they do instrument the client, and whether it's worth it
could you mention what it would bring? like having the same trace for the client request and the server response?
