Release Process Tag Convention Mismatch #224

Our git tag conventions for releases (vX.Y.Z) doesn't match the image tag conventions used in the build (by operator-sdk and such). We should strive for consistency in our release process so that everything uses the same convention and eliminate manual steps around tagging releases.
