Ref #1666. The CIBW_ENVIRONMENT and CIBW_ENVIRONMENT_PASS options also affect the test phase, which wasn't clear.
Also, there are some environment variables that are overridden as part of cibuildwheel's operation. Good to note these so users are aware.
