Locking the main workflow to opensearch 2.18.0 since opensearch latest (2.19.0) has an HTTP bug that causes typhoeus test to hang indefinitely. Note that the bug has been fixed on on the main branch of opensearch and that's why the test-unreleased workflow passes.
