Docs needed: PII, stance, logs #831
Description
A good feature request (with PR offer) in nats-io/nats-server#6761 highlights that we could stand to have docs around the nats-server and logging vs PII.
We should make it clear that PII at normal levels is limited to IP address and we reserve the right to remove that, and warn that debug and trace log levels may cause the logs to contain PII.
(And make sure that this is index/search keyworded for PII, redaction, logs, logs too much, etc)
There are probably other things which could go into this, if we think about for longer than the 2 minutes I've given it, so this should be a placeholder for "more ideas of what should be in that section of the docs", please comment!
