Generate Mintlify Preview Environments on PRs

I'm currently reviewing #1529 and I see the following preview environments from Vercel:

However, there's no preview environment for Mintlify, even though this change should influence Mintlify.

Can we improve this for the future?

@lightwalker-eth I'm not sure how we achieve this to be fair. #1529 changed the server OpenAPI only, which yes influences the output of Mintlify, but Mintlify can't detect that because we didn't change the folder it is connected to.

To do what we need, we'd probably need to change the mintlify docs instead of being automatically generated from the spec. Instead we'd commit the API pages and point to the relevant URLs, using the manual creation https://www.mintlify.com/docs/api-playground/mdx-setup.

I've been thinking about the manual API spec pages a lot, and it might be better to do this instead of the file1/file2 setup we discussed earlier in the week.

Basically, PRs would contain updates to the docs for the spec, as well as any spec changes, so each PR would have then a preview with the docs/playground of that state. This could simplify things. However, we'd still need to prevent on merge the deploy of main, as it wouldn't be released necessarily. I can't find a way to do this, but I tweeted Mintlify to ask about this more.
