add theta theme example screenshot in README.md

currently, the README.md contains screenshots of the startify and dashboard themes, but not of the theta theme.

you should add a picture of the theta theme.

initially i didn't document it because it was pretty untested, but i think it's been long enough now with very few issues raised that i could yeah
