Improve field descriptions in schema

Namely, the descriptions of `ploidy` and `taxonomy_id` for workflows may warrant updating to be more specific (see #369) -- potential idea for `taxonomy_id` description courtesy of @d-callan:

> "An NCBI Taxonomy ID. If non-null, all assemblies which have this ID as part of their taxonomic lineage will display this workflow."
