Rename `example-data` repo to something more self explanatory?

At some point, do we want to consider renaming this repo from example-data to something more self explanatory, like data-transformation-workflows? Since it contains Jupyter notebooks that illustrate the transformation of node data into CRDCH instance data.

data-transformation-workflows is good, but leaves out both the example data (which I think is important) and validation (which I think is generally an important part of what this repo is for).

I think we should emphasize the "example"/"exemplar" aspect of it: what about example-workflows? example-data-and-workflows?

That makes sense. I think example-workflows, example-data-workflows and example-data-and-workflows all work perfectly.

Maybe something with the word "implementation" in it? Since we're implementing the CRDC-H model?
