[Refactoring] Remove sigv4 sidecar post v1.26 tests

Currently we are leveraging the sigV4 sidecar with prometheus to send metrics to AMP (introduced in this CR #325). This can be removed going forward once we have the remote-write support in the upstream CL2 tests.
