Add support for custom opentelemetry tracing/metrics/logs exporters #835

Describe the feature request
In order to better support users that want better supervision of Edge, I would like to be able to configure custom endpoints for exporting metrics/traces/logs using otel.
Background
We have users wanting to integrate/monitor using newrelic, and we've heard datadog as well. Having configuration available to setup exporting of metrics/traces/logs to a collector would help.
Solution suggestions
