Update install instructions for v25

Point towards https://tomographicimaging.github.io/scripts/env/cil_demos.yml

Also https://tomographicimaging.github.io/scripts/env/cil_demos.yml needs to be updated to v25 of CIL

Make sure we have tested in this environment
