This PR replaces Spigot-Essentials with EssentialsX (specifically version 2.17.2.113), and updates config files as necessary to accommodate for additions and changes.
EssentialsX includes full support for 1.15.2 items and mobs, unlike Spigot-Essentials which is limited to 1.13. Furthermore, EssentialsX is now used on ~65000 servers daily, and is one of the most downloaded resources on SpigotMC. Testing the latest 1.16 snapshots with EssentialsX on SpigotCraft would be invaluable to the wider SpigotMC community, as it would enable us to highlight areas of concern regarding 1.16 compatibility and address these more quickly.
This PR supersedes #54.
