Pickers: Use InputDefaults for inputs in Picker components

Description

We came across a few instances where some InputDefaults weren't applied to text inputs present in Pickers, this PR fixes those instances.

How Has This Been Tested?

Visually by changing globals and comparing behaviour (mainly shrink labels) with live site.
