Fail to launch UI on MacOS 15.3

When I try to build and launch (using mvn clean package fallowed by ./scripts/launchUI.sh) it gives me the fallowing error message and hangs

I found out simply bumping the the openjfx version to latest lts to solve my problem. So I created #398 with that fix, feel free to review and merge it if that is indeed the root cause.
