Add filter example of message monitoring using Opik

This filter allow users to logs their conversations to Opik https://github.com/comet-ml/opik allowing them to gain more visibility into what is happening it under the hood and evaluate the model generations. I tested it locally and it works fine, here is an example chat logged into Opik:
