Use release tags as docker tags

It would be good if the docker tags reflect the release tags. This could be achieved with:
https://github.com/docker/metadata-action

For the past release it might also be possible to retro-assign the wanted tags, cf. https://docs.github.com/en/packages/working-with-a-github-packages-registry/working-with-the-container-registry
